To discover what Americans might be missing, Schindler teamed up with a biologist and butchered 13 whitetail deer. They measured the caloric value of the venison meat, as well as every other edible part of the animal. In their yet-unpublished study, they calculated that the parts of the deer that are often not eaten would provide—depending on an individual’s energy needs—between 13 and 31 days worth of calories. ...
